How to Dehydrate Mushrooms: A Complete Guide to Preserving Edible & Gourmet Varieties

Recently, our local grocery store ran a sale on fresh edible and gourmet mushrooms, and naturally, we took full advantage of it!

Let’s just say we came home with far more than we could reasonably use in a week.

While fresh mushrooms are a welcome addition to any meal, their short shelf life poses a challenge, as most varieties remain at their best for only five to seven days. To ensure our generous haul didn’t spoil before we could enjoy it, we preserved the mushrooms by drying.

No matter how you obtain your mushrooms — whether safely foraged, purchased in bulk at your local farmers’ market, or homegrown — knowing how to properly dehydrate edible and gourmet varieties is invaluable.

Drying, which removes moisture to inhibit spoilage, dramatically extends mushrooms’ shelf life (often for months!) while also concentrating their deep, earthy flavor.

In this guide, we’ll walk you through everything you need to know about dehydrating edible and gourmet mushrooms at home, share best practices for storing them once dried, and show you how to rehydrate them later for flavorful, satisfying dishes.

How to Dehydrate Mushrooms at Home in 4 Simple Steps

You can dry almost any edible or gourmet mushroom, but some of the all-time favorites for dehydration are Portobello, Chanterelle, Morel, Cremini, Shiitake, Oyster, Porcini, and Enoki.

The method for drying different mushrooms is largely the same, and the best part is you don’t need any fancy tools —chances are, everything you need is already in your kitchen.

Below is a simple, step-by-step guide to walk you through the mushroom dehydration process from start to finish.

  1. Check and Clean the Mushrooms

The first step in successfully dehydrating mushrooms is ensuring they’re at peak freshness.

There are a few clear signs that mushrooms are past their prime. Watch for a slimy film forming on the surface, shriveled or excessively wrinkled caps, dark spots, and any strong fishy or unpleasant odor. 

If you notice any of those warning signs, resist the temptation to “save” them by drying; it’s best to discard the mushrooms.

To extend the freshness of mushrooms after opening the store packaging, transfer any leftovers into a paper bag. Paper allows air to circulate and helps absorb excess moisture, which slows down the rotting process. (Avoid airtight plastic containers, as they tend to trap moisture and accelerate decay.)

Once you’ve confirmed the mushrooms are fresh, clean them carefully. Use a dry cloth or soft brush to gently remove dirt, substrate, or debris from the caps and stems. 

If you encounter stubborn bits, lightly dampen a cloth — just enough to loosen the debris — and wipe them clean. Avoid washing mushrooms, as their porous flesh absorbs water quickly, the very moisture you’re trying to remove, making the dehydrating process slower and more difficult.

  1. Slice Into ½- or ¼-Inch Pieces

Avoid the common mistake of dehydrating whole edible or gourmet mushroom caps, as they hold a high amount of moisture, particularly in the center. Leaving them intact dramatically extends drying time and increases the chance that moisture will remain trapped inside. Any residual moisture can affect texture and flavor and, more importantly, introduce potential food safety issues during storage.

For uniform, even drying, use a sharp knife or mushroom slicer to cut the mushrooms into pieces between ¼ inch (0.6 cm) and ½ inch (1.3 cm) thick. 

The exact thickness should reflect how you plan to use them later. If you prefer meatier pieces in soups, stews, or sautés, slice them on the thicker side. Just remember that thicker cuts will require more drying time, whether you’re using an oven or a dehydrator.

Mushroom size should also influence your cutting choice. Smaller button mushrooms can usually be halved, while larger varieties should be chopped to around ¼ inch thickness.

As you work, arrange the edible or gourmet mushroom slices on your food dehydrator trays without letting them touch or overlap. Adequate spacing allows air to circulate freely around each piece, helping moisture escape efficiently and promoting thorough, consistent drying.

  1. Dry Your Edible or Gourmet Mushrooms

If you’re using your oven, set it to its lowest temperature, ideally around 130°F/54°C. If it doesn’t go that low, set it as low as it will go and always prop the door open slightly with a heat-proof wooden spoon. This improves airflow and prevents moisture from building up regardless of your oven’s temperature range.

Keeping the door ajar is essential: a closed oven traps moisture and will steam rather than dry your mushrooms, hardening the outer layer and preventing moisture from escaping.

Arrange your slices on a parchment-lined baking sheet in a single layer with space between each piece. Drying time depends on slice thickness, moisture level, and batch size — as a guide, 1/4-inch slices typically take 4–8 hours, while thicker cuts may need longer. Flip and blot with a paper towel every 1–2 hours for even drying.

If you have a food dehydrator, the recommended range for edible/gourmet mushrooms is 110–130°F (43–54°C) — warm enough to remove moisture while protecting their flavor and nutritional value. If your model only has low/medium/high settings, use the lowest consistent heat setting.

Fully dried mushrooms should feel crisp and brittle, snapping cleanly when broken — not bending or feeling leathery. Let them cool to room temperature before testing for doneness.

  1. Store Your Mushrooms

Once they pass the dryness test, put the dehydrated mushrooms in vacuum-sealed bags or airtight containers and store them in a cool, dark location to extend shelf life. 

Be sure to label each container or bag with the mushroom type and drying date for easy reference later.

Well-dehydrated and stored edible or gourmet mushrooms can keep for a year or longer. In comparison, frozen mushrooms generally hold their best quality for only three to four months.

How to Rehydrate Your Dried Edible & Gourmet Mushrooms

When you’re ready to use your dried mushrooms in soups, pasta dishes, stir-fries, pizzas, stews, risottos, or other recipes, start by placing the desired amount in a bowl. Pour in enough cold or hot water to completely cover them. (While either works, hot water will speed up rehydration slightly.)

Stir briefly to ensure they’re fully submerged, then let the mushrooms soak for 15 to 30 minutes. As they absorb the water, they release a dark, intensely flavorful broth — don’t let it go to waste! This soaking liquid makes an excellent base for sauces, gravies, and soup stocks.

Once the mushrooms have softened, drain them through a fine-mesh strainer or gently pat them dry with a paper towel. From there, cook them just as you would fresh mushrooms.

If you’re adding dried mushrooms directly to soups or stews that already contain plenty of liquid, you can skip the rehydration step altogether.
