Shiitake, or Lentinula edodes, are the most popular mushrooms in the world. Native to the warm and moist climates of East Asia, these mushrooms are cultivated and enjoyed around the world. They naturally grow in groups on the decaying wood of deciduous trees, particularly shii and other chinquapins, chestnut, oak, maple, beech, sweetgum, and poplar. Shiitake, while delicious, provide fiber, B vitamins, minerals, polysaccharides, terpenoids, sterols, lipids, beta-glucans, and many of the same amino acids found in meats. The have been found to aid in heart health, boost the immune system, contain anti-cancer properties, and promising antifungal, antibacterial, and antiviral effects. Often considered as the fifth taste among sweet, sour, bitter and salty, Shiitake is used in many culinary recipes and nutritional supplements.*
