Shiitake, or Lentinula edodes, are the most popular mushrooms in the world. Native to the warm and moist climates of East Asia, these mushrooms are cultivated and enjoyed around the world. They naturally grow in groups on the decaying wood of deciduous trees, particularly shii and other chinquapins, chestnut, oak, maple, beech, sweetgum, and poplar. Shiitake, while delicious, provide fiber, B vitamins, minerals, polysaccharides, terpenoids, sterols, lipids, beta-glucans, and many of the same amino acids found in meats.
